Pear Bread
My beautiful cousin recently shared some fresh pears with me that a co-worker had shared with her. Honestly, pears do not rank high in my favorite fruit list, but I had several and wanted to find a recipe that would change my mind about pears.
Recipe
3 Large Pears
1 ½ Cup Sugar
¾ Cup Vegetable Oil
1 tsp Vanilla
3 Cups Flour
2 tsp Baking Powder
2 tsp Cinnamon
2 tsp Baking Soda
1 tsp Salt
4 Cups Pears (finely chopped)
1 tsp Lemon Juice
1 Cup Walnuts (chopped)
Directions:
- In bowl, combine eggs, sugar, oil, and vanilla. Mix well.
- In a separate bowl, combine flour, baking powder, cinnamon, and baking soda.
- Stir flour mixture into egg mixture until just moistened.
- Toss pears in lemon juice.
- Stir in pears and walnuts (batter will be thick)
- Spoon into two (2) greased 9X5” loaf pans.
- Bake at 350 degrees for 55-60 minutes.
- Cool for 10 minutes before moving to wire racks.
Now that you have the recipe, here is why I love it…instead of walnuts, I tossed in dried blueberries (my son has a nut allergy).
Finally, here is what made this pear bread AMAZING.I sliced the bread, added generous slices of goat cheese, and drizzled with local honey, broiled on low for a few minutes and plated. Try it!
